Dessert...

We made a raw dessert that was delicious- kind of like an ice cream pie...

Crust was almond meal and raw honey and coconut oil, filling was purée frozen banana with a little cocoa powder.... Then topped with two cans of full fat coconut milk- put in the freezer and then
Mixed in the food processor with vanilla extract and agave syrup.

It's so delicious...



We also made vanilla coconut milk ice cream.....
We haven't tried it yet.....

It was a hot day!

It was almost 100 degrees today! After all my complaining, I was THRILLED! My poor kids were NOT!

They wanted to lay around and watch movies under fans.

We baked some gluten/grain free, dairy free carrot cake- using almond butter, eggs and carrots-

Shredded rainbow carrots are so pretty!



Ira didn't like it- she said"tastes too carroty"

It was still warm when she tried it though. I just had some cold- it's delicious. Saving some for her to try again.


Then we made iced hibiscus tea with lemons...


Ira broke out her new protractor set...


Modeling clay...


We tried out some watercolor crayons but both girls were "too hot" so we ate dinner and went to whole foods...

When we came home it was perfect walking weather and the moon was bright so we took a walk... Found this tree.... We saw a face at the time...don't so much see it now :)

Breaking in the kitchen...

Today we really started using the kitchen like we used to...





We made almond butter & tahini...

















Ira made hemp milk with molasses- with a strawberry on the rim.















Gluten free S'mores....






















Mama K's play clay... So so great. Gluten free and scented beautifully.

we each had our own swing for a while, then the girls wanted to be pushed higher than they could go.. so jared pushed them- it reminded me of tennis for some reason


















ira was not wanting to go- but it was (clearly) getting too dark!

after some star gazing on the way home- we came home and downloaded a free app.
It shows the constellations in the night sky from where ever you are- and shows a global view- ira loved seeing how it was dark where we were- but not yet dark in alaska....

loooong day....

started off with a KERF style bowl of oats.... except much larger portion for this huuuuuungry nursing mama....


then we made some ALMOND BUTTER....
i totally shook it up this time, last time i added cinnamon, vanilla, some salt, and coconut oil.

this time~
in addition to 2 c. raw almonds...

1/3 c. flax seeds

1/3 c. sunflower seeds

and a bit of each below.....


sooooo gooooood!


then, i was staring at leftover, uneaten, gonna go to the dogs oatmeal....i thought, "hmmm... ill make a cookie..." so i preheated the oven and then it hit me...."i could make pudding or mousse"

so-
2c. cooked oats
1/2 banana
place in food processor
drizzle in raw agave
vanilla extract
pinch salt
2 T of my fresh almond butter
and then cocoa powder until super delicious.....then drizzle in hemp milk until desired consistency...

so delicious- i didnt get a pic until it was gone.

new recipes....



Almond Butter
this time i *slightly* toasted the raw almonds.... slightly, as in...barely even warmed them.
after it turned to butter, i added some vanilla extract, cinnamon and a teensy bit of raw agave.

de-lic-ous

then, in a fit of dairy desperation (withdrawal symptoms are taking longer to go away this time)
i had freshly baked pitas and inspired by this and this- i made this~

very plain... but delicious as well. so delicious i took a bite before the picture! lol

i made a second one with fresh basil on top and it was super good.


~pizza~
i toasted the pita in the oven for 1 minute, added tomato paste and oregano and toasted again for 2 minutes, then added "cheese sauce"

~cheese sauce~
in a food processor:
1 clove garlic
pinch of tumeric
1T tahini
lots of nutritional yeast to taste
small drizzle of evoo until it was pourable....second round i used less evoo and liked it better....but this needs to be played with more.... its the kind of thing that feels like its one ingredient away from being amazing.

ALMOND BUTTER

we made almond butter for the first time!

I had no idea it was so easy.... except for the fact that our food processor is from the 70's.... its a beast of a machine that works awesome and is still going strong... however- it overheated after the first 2 cups of almond butter, so I had to take a longish break to let it cool.

5 cups almonds= 16oz. jar of almond butter- plus 3/4c almond butter left over.
Organic raw almonds were on sale for $6.99/lb. and a 16 oz jar of organic raw almond butter was $20.99! talk about savings.

I had zero faith that this process would yield anything but almond flour... I was such a fool-

it took about five full minutes - but it happened!
