Vegas Day Two

"Go Raw"
Vegan raw lunch...







Emers and his favorite thing...



We hung out by the lagoon and ducks for a while- the weather was AMAZING!



Then we met up with dianna and went to Sigfried & Roy's Secret Garden.




































Then we went out to red rocks...















Then after dinner- back to the strip to meet friends, watch the volcano at the mirage, and walk around...

My kids were seriously stoked...

Monday...

Ira convinced Emers that the furry pet was real. Poor sweet boy needs a real animal. He was soooooo excited...












Amazing kale salad-
Massage kale with olive oil and lemon, add braggs amino acid or tamari. Then a handful each of sunflower seeds, raw pumpkin seeds and sesame seeds. Onions optional!

So delicious.

Day two- a learning Curve?

Today was busy!

Some quick snap shots-

Juicing... Spinach and apple juice for the girls... Kale,celery, carrot, apple, Ginger and cilantro juice for me.





Ira's loft- she stowed some books, favourite playsilks and her princess lamp up there....

Iras experiment with dish soap and celery- seein if she could get the celery water to turn green if she soaked it longer, and seeing how the water got less and less blue as the dawn dissolved.

Lemons lemons loooove

What a morning! Since painting the walls bright cheery colors with thin white curtains- my usual late sleeping children have been waking around 630 every morning!!!!! Ahhhhh!

So we are making the most of all this daylight.

Keira made herself a heart hair clip



She drew a field of tulips- that luv promptly attacked with a marker



Amd we are now making lemon ice- with a recipe sent from jareds dad.
Very simple
2c. Water
1c. Sugar
1T grated lemon peel
1c. Lemon juice
Make simple syrup of water and sugar, simmer 5 minutes. combine all the rest into cooling syrup. Place in loaf pan in freezer. Stir ever 15 min-30 min for 3-4 hours. Enjoy.



we used fresh pocked lemons from the tree out back.

Another recipe

You will love me for....

We bought these bars at whole foods, but once we took a bite, we knew we could make them.

8 oz pitted dates pureed
4 oz medium shred shreddd coconut.

Easiest process ever, roll the sticky sticky dates into a log (tastes best- the ball shape leave more date bites without coconut)

Roll log in coconut!

The whole foods on had a slivered almond pressed in. I bought raw cashews to press in, but they didn't last long enough.

dairy free followers

i bring to you- heaven!

try it- youll love it

Both adapted from recipes from choosingraw.com and sunny raw kitchen.




Cashew cream
Soak cashews for a really long time. 2 hours minimum, preferably over 4 hours. This makes a smoother cream...

Drain and rinse cashews and add to processor. I do about two cups...
Then drizzle in agave or two or three soaked pitted dates.
Vanilla extract to taste and then drizzle in water until at desired consistency. Which for this was a cool whip type texture.

For my sour cream/ Alfredo / heavy cream replacement I did the same soaking to the cashews then added to processor with 2 tsp sea salt, pinch nutmeg and squeeze lemon juice.
More nutmeg for Alfredo
More lemon for sour cream
Less lemon and less nutmeg for heavy cream.

Pie

We made a fabulous vegan pie tonight- thought I'd share-

Handful flax seeds
1/2 c almonds
1/2c almond butter
1/4c coconut oil
Put all into food processor. Drizzle in agave to taste. Once it's smooth- spread evenly in pie dish. Put in freezer.




Then, I grabbed some leftover oatmeal-



Put that in the processor and then added
1 can solid coconut milk (from fridge)
Cocoa powder to taste
Splash vanilla
Agave to taste

Process until smooth then spread over hardened 'crust' return to fridge for can hour.





Yum delicious.
